One of the first meals that I ever made for my husband was this BBQ Chicken pasta recipe. He absolutely loved it, but then again, he loves BBQ Chicken. This is my go-to dish for coworkers that have just had babies or are on bed rest and can't cook. It is easy, yet something good and filling.
BBQ Chicken Pasta
slightly adapted from Mel's Kitchen Cafe
1 tablespoon extra-virgin olive oil
2 boneless skinless chicken breasts, cut into bite-size chunks
1 red onion, diced
1 teaspoon Italian Seasoning
2 cups water
2 1/2 cups chicken broth
1/2 teaspoon salt
12 ounces penne pasta
2/3 cup barbecue sauce
1/3 cup greek yogurt
1/2 cup shredded mozzarella cheese
1/2 cup shredded sharp cheddar cheese
1) In a large nonstick skillet heat the olive oil over medium
heat. When hot, add the chicken, onions, and seasonings and saute, stirring
occasionally, until the chicken is browned and cooked through. Remove
the chicken and onions to a plate and set aside.
2) In the same skillet, add the water, chicken broth, penne and salt.
Bring to a boil and simmer for 12 to 15 minutes, until the liquid is
almost absorbed and the pasta is tender.
3) Stir in the barbecue sauce and greek yogurt. Once mixed, add in the reserved chicken, onions and shredded
cheese. Stir to combine and cook until everything is heated through.
I love the smokey flavor of the barbeque sauce mixed with the creaminess of the sour cream. It is a delicious weeknight meal that is satisfying for everyone.
